The general datahoarder hive mind seems to be moving away from shucking and towards manufacturer refurbished drives, see https://serverpartdeals.com/ for example, especially in RAID where you can lose a drive with impunity and warranty is uncomplicated by shucking.
In RAID and similar strategies the redundancy comes from a parity drive, which protects against the loss of one (or more with some schemes) drive, so if you only have two drives of the same size it’s just a mirror (50% of total pool) but you can have a drive die without data loss. With four drives you get to use three of the drives (75%), five you can use four (80%) etc. Classical RAID uses identical sized disks but there are other approaches that allow different sizes e.g. mergerfs + SnapRAID or Unraid, here you lose your largest disk to parity.
RAID is generally faster than the individual drives, e.g. mirroring is nearly twice as fast.
Perhaps go with another 2*8Tb which will get you 24Tb usable and use the 16Tb for offline, preferably offsite backup (remember RAID is not a backup, it protects you from disk failure, but not user error for example accidentally deleting things)

Your biggest bang for buck is with cheap second hand drives, keep a spare on hand to rebuild the array / volume when one dies. You should be aware that the number of drives in the array directly affects the amount of usable space, 2 drives 50% of total available (a direct mirror, to compensate for the loss of one drive), 3 drives you get 66%, 5 gets you 80%. Say you get 6 4Tb drives, keep one as a spare and the remaining 5 will give you 16Tb usable (with one lost to parity so you can survive one disk failure). You then immediately want to save for a 16 Tb external drive for offline, preferably offsite backup (RAID is not Backup!). As others have wisely said, anything can be used to host, but aim at the most power efficient. If necessary get a PCI card for more SATA or SAS ports. Identify high value, small files, documents, current work, personal photos, source code and so forth and arrange for cloud backup, preferably with local encryption so you needn’t trust the cloud provider, preferably in at least two places (so one can go tits up or enshittify without bothering you). You’d be surprised what fits into a free 10Gb account if you triage well.

Explicitly denying a list of companies, e.g. Meta for now, is likely more legally defensible and gets around the issue of indie devs (who mayhap have TOS that allow ads, and it’s the eye of the user that sees the ads, still patreon or straight up paid apps are more in keeping with the fediverse IMO). It also makes the point very specific that these assholes are unwelcome. Perhaps the EFF or someone could draft something… Trick would be to update it as new pricks enter the arena, but that doesn’t seem unachievable.
On GrapheneOS you can disable GBoard’s network (after downloading the STT model, took a day or so when I did it) and uninstall google services and it still works fine…
